A from-scratch chai of black tea simmered with warm spices, milk, and honey, served hot and frothy.

Ingredients
- 4 cups / 960 mL water
- 4 black tea bags
- 3 cinnamon sticks
- 6 whole cloves
- 4 green cardamom pods, crushed
- 1 piece / 1 inch / 2.5 cm fresh ginger, sliced
- 2 cups / 480 mL whole milk
- 3 Tbsp / 64 g honey, or to taste
Step-by-Step Instructions
- Step 1: Bring the water, cinnamon, cloves, cardamom, and ginger to a boil, then reduce the heat and simmer 10 minutes.
- Step 2: Add the tea bags and steep off the heat 5 minutes. Remove the tea bags.
- Step 3: Stir in the milk and honey and warm through without boiling. Strain into mugs and serve hot.
Cook's Notes
- Serves 4 | saucepan
- Do not boil once the milk is in, or the chai tastes scalded.
- Crush the cardamom pods so they release their flavor.
- Steep the tea off the heat so it does not turn bitter.
