Ingredients
- 1 lb / 454 g fresh strawberries, hulled
- 1/2 cup / 100 g granulated sugar
- 1/2 cup / 120 mL water, for the syrup
- 3/4 cup / 180 mL fresh lemon juice
- 1 1/2 cups / 360 mL cold water
- 3 cups / 450 g ice
- 1 lemon, sliced, to serve
Step-by-Step Instructions
- Step 1: Make the simple syrup: simmer the sugar and 1/2 cup / 120 mL water until the sugar dissolves, 3 minutes. Cool completely.
- Step 2: Blend the strawberries, syrup, lemon juice, cold water, and ice until smooth and slushy.
- Step 3: Taste and adjust with more syrup or lemon, pour into glasses, and garnish with lemon slices.
Cook's Notes
- Serves 4 | blender | small saucepan
- Simple syrup, not granulated sugar, so it blends smooth.
- Blend the ice last so the drink stays slushy instead of melting.
- Best the day it is made.
