Ingredients
- 2 heads / 2 lb / 907 g broccoli, cut into small florets
- 8 slices / 240 g beef or turkey bacon, diced (pork-free)
- 1/2 red onion, finely diced
- 1 cup / 113 g sharp cheddar, grated
- 1/2 cup / 120 g mayonnaise
- 1/4 cup / 60 mL buttermilk
- 2 Tbsp / 30 mL apple cider vinegar
- 1 Tbsp / 12 g granulated sugar
- 1/2 tsp / 3 g kosher salt
- 1/4 tsp / 0.5 g freshly ground black pepper
- 1/2 cup / 50 g sliced almonds, toasted
Step-by-Step Instructions
- Step 1: Cook the pork-free bacon in a skillet until crisp, then drain on paper towels.
- Step 2: Whisk the mayonnaise, buttermilk, vinegar, sugar, salt, and pepper in a large bowl.
- Step 3: Add the broccoli, red onion, cheddar, and pork-free bacon and toss until evenly coated.
- Step 4: Chill at least 1 hour, then scatter over the toasted almonds just before serving.
Cook's Notes
- Serves 8 | skillet | large bowl
- Pork-free bacon only; beef or turkey bacon gives the smoke without pork.
- Cut the broccoli small so every bite is tender.
- Add the almonds at the end so they stay crunchy.
