Ingredients

  • 12 oz / 340 g pearl onions, peeled
  • 4 cups / 600 g frozen peas
  • 3 Tbsp / 42 g butter
  • 1 tsp / 5 g granulated sugar
  • 1 tsp / 6 g kosher salt, plus more to taste
  • 1/4 tsp / 0.5 g freshly ground black pepper
  • 2 Tbsp / 6 g fresh mint, chopped

Step-by-Step Instructions

  1. Step 1: Boil the pearl onions in salted water 8 minutes, until just tender. Add the peas and cook 3 minutes more. Drain well.
  2. Step 2: Melt the butter in a skillet over medium heat, add the onions and peas, and toss with the sugar, salt, and pepper.
  3. Step 3: Cook 3 minutes to glaze, stir in the mint, and serve hot.

Cook's Notes

  • Serves 6 | large pot | skillet
  • Drain well so the butter glazes instead of pooling.
  • Frozen peas are sweeter than most fresh; do not overcook them.
  • Butter only, no oil, to keep the dish free of plant fats.
