Ingredients

  • 2 lb / 907 g Brussels sprouts, halved
  • 6 slices / 180 g beef or turkey bacon, diced (pork-free)
  • 3 Tbsp / 42 g butter, melted
  • 1 tsp / 6 g kosher salt
  • 1/2 tsp / 1 g freshly ground black pepper
  • 1 Tbsp / 15 mL fresh lemon juice

Step-by-Step Instructions

  1. Step 1: Heat the oven to 425°F / 220°C. Toss the Brussels sprouts and pork-free bacon with the melted butter, salt, and pepper on a large sheet pan.
  2. Step 2: Spread into a single layer and roast 25–30 minutes, stirring once, until the sprouts are deeply caramelized and the pork-free bacon is crisp.
  3. Step 3: Squeeze over the lemon juice, toss, and serve hot.

Cook's Notes

  • Serves 6 | large sheet pan
  • Pork-free bacon only; beef or turkey bacon gives the smoke without pork.
  • Single layer and cut-side down so the sprouts caramelize instead of steam.
  • Butter, not oil, to keep the dish free of plant fats.
